I haven't done this, but I can see it working out for specific niches. For example if your community is based around math, you could offer some courses to help your members out if they struggle with specific things such as algebra, fractions, etc. Invision makes it easy to have courses integrated with your community, I believe they're the only software provider that offers this. (If there are other ones for other software, please list them below.)
I've had passing thoughts on this, but I don't have anything I really could sell as a course. Plus I don't think there's any LMS type addons for XenForo, at least no fairly recent ones.
